Classic Key Lime Pie

For the Crust:1 ½ cups graham cracker crumb ¼ cup granulated sugar ½ cup unsalted butter, melted

For the Filling:4 large egg yolk 1 can (14 ounces) sweetened condensed milk ½ cup fresh Key lime juice (about 20-25 Key limes or 4-5 regular limes) 1 tablespoon Key lime zest

For the Topping:1 cup heavy whipping cream 2 tablespoons powdered sugar 1 teaspoon vanilla extract

1. Prepare Crust:Preheat oven to 350°F (175°C). Mix graham cracker crumbs, sugar, and melted butter. Press into a 9-inch pie dish and bake for 10 minutes. Cool.

2. Make Filling:Beat egg yolks until lightened, about 2-3 minutes. Gradually add sweetened condensed milk, then Key lime juice and zest. Pour into crust.

3. Bake Pie:Bake at 350°F (175°C) for 15 minutes until filling is set. Cool to room temperature, then refrigerate for at least 3 hours.

4. Prepare Topping:Beat heavy cream, powdered sugar, and vanilla until stiff peaks form. Spread over the chilled pie.
